Vegetable Puff

Vegetable Puff is a very famous evening time snack. The flaky outer layer with spicy vegetable stuffing is an excellent combination. Making of the puff pastry sheet is quite a tedious process which involves continuous brushing of butter/ oil and multiple foldings to bring in the flakiness. This recipe is with the store bought pastry sheets but yet turned out to be very delicious!

Cooking Time – 30 minutes | Preparation Time – 15 minutes | Serves – 4-5

Things Required

Puff pastry sheets – 10 sheets

Potatoes – 4

Onion – 1

Green chillies – 2

Boiled Peas – 2 tablespoon

Carrot – 1/2 cup

Beans – 10

Turmeric powder – 1 teaspoon

Chilli powder – 1 tablespoon

Garam masala – 1 teaspoon

Curry leaves – few

Ginger garlic paste – 1 teaspoon

Butter/ Oil / Milk- 2 tablespoon

Salt – as required

Water – as required

1.Heat oil in pan. Add curry leaves, chopped onions, ginger garlic paste, green chillies, peas, carrot and beans. Fry well.

2. Peel and boil the potatoes. Mash the potatoes and add to the fried mixture. Add turmeric powder, chilli powder, garam masala and salt. Once the mixture cooks well & combines together, turn off the gas and cool down the mixture. Make sure the mixture is not watery.

3. Take a puff pastry sheet, place a spoonful of mixture. Seal the sides and brush with either butter, oil or milk to get the golden brown color.

4. Place baking paper in baking tray and arrange the puffs. Bake for 20 mins with a temperature of 200°F under convection mode. If you have a grill oven, place with the same temperature in grill for 20-25 minutes.

5. Once the puff starts ‘puffing up’ and becomes golden brown, provide a standing time of 2 minutes and serve hot with some tomato sauce.
